Ginger And Lemon Shortbread |

A quick shortbread, ideal with your tea or coffee. Ingredients:
6 oz plain flour |
5 ml spoon (teaspoon) ginger |
4 oz butter (soft) |
2 oz castor sugar |
grated rind of 1 small lemon |
castor sugar, to dredge |
Directions:
1. Sieve flour and ginger together into a bowl 2. Rub in the butter until mixture resembles fine breadcrumbs 3. Add castor sugar and lemon rind 4. Knead on a lightly floured surface to form a smooth dough divide in half and roll out 5. line 2-18cm (7 inch) flan or cake tins 6. Mark each into 8 portions and prick all over with a fork 7. Crimp and decorate edges if you wish 8. Bake in the middle of oven 150c/gas 2 for 45-50 min's 9. (don't over cook, should be pale gold) 10. Leave to cool slightly before lifting onto a wire tray 11. Sprinkle with castor sugar |
