A tasty side dish from the Junior League of Wichita Falls TX - these are yummy! (cooking time includes marinating time) Ingredients:
6 tablespoons red wine vinegar |
3/4 cup oil |
2 medium onions, chopped |
salt and pepper |
2 (16 ounce) cans green beans |
8 slices crisp cooked bacon, crumbled |
8 hard-boiled eggs, chopped |
6 tablespoons mayonnaise |
4 teaspoons red wine vinegar |
2 teaspoons prepared mustard |
Directions:
1. Combine 6 tablespoons vinegar, oil, onions, and salt and pepper to taste in a large bowl. 2. Drain and rinse beans. Add to bowl of marinade and cover. Chill several hours. 3. Combine chopped eggs, mayo, 4 teaspoons vinegar, mustard, and salt to taste in a medium bowl. 4. To serve, remove beans from marinade and place in a salad bowl. Add crumbled bacon and top with egg dressing. |
