This is quite possibly the simplest dessert ever. A rich and creamy taste-treat, inspired by the contest ingredients of RSC #12. A run-away favourite in our home. Ingredients:
8 ounces 2% greek yogurt (very thick yoghurt) |
4 ounces laughing cow cheese, original flavour |
4 tablespoons creamy peanut butter |
3 1/2 tablespoons honey |
3/4 teaspoon cinnamon |
1/2 teaspoon vanilla extract |
1 (8 ounce) can pineapple chunks, well drained |
toasted pecans (optional) |
Directions:
1. Beat together all ingredients, except pineapple, until light and creamy and well-blended, about 3 minutes. Stir in pineapple chunks. 2. Distribute amongst 4 custard cups or pretty goblets. Refrigerate for at least 1 hour before serving as the peanut butter will firm up the creme considerably. 3. If you want to go the whole hog, sprinkle a few toasted pecans over top for crunch. |
