This has become a Christmas tradition in our family, but is delicious and so easy to make, it's good anytime! Wonderful with coffee, tea, cocoa, all by itself!! Very moist, almost like a cake instead of a bread. Ingredients:
1/2 c (1 stick) soft butter |
1 c sugar |
2 eggs |
1 t vanilla |
1 t baking soda |
2 c flour |
11 oz can mandarin oranges - well drained |
2 ripe bananas - mashed |
1 c coconut |
1/2 c ea: semi-sweet choc. chips, white choc. chips, chopped dates, chopped marashino cherries |
Directions:
1. Line 2 8x4x2 loaf pans with Reynolds's Wrap Release Heavy Duty Foil (Trust me, this works so much better than spraying the pans!!) 2. Cream room temp butter, sugar. 3. Beat in eggs, vanilla. 4. Stir in bananas. 5. Combine flour, soda and add to creamed mixture. 6. Stir in all other fruits, chips, coconut etc. 7. Batter will be cake batter consistency. 8. Pour equally into pans. 9. Bake 350* for 55 minutes. 10. Cool 10-15 minutes before lifting foil and all out of pans. 11. Gently pull foil from bread edges. 12. Cool completely before slicing. 13. ENJOY!! |
