So easy to make, your guests will love these chewy little ghost-like morsels of coconut. Ingredients:
4 egg whites, beaten |
1 teaspoon vanilla extract |
1/8 teaspoon almond extract |
3/4 cup sugar |
1/4 teaspoon salt |
3 cups sweetened flaked coconut |
Directions:
1. In a large bowl, whisk together all ingredients except coconut. Add coconut; mix well. Drop by rounded teaspoonfuls onto parchment paper-lined baking sheets. Bake at 325 degrees for about 25 minutes, or until set and golden; rotate baking sheets between upper and lower oven racks halfway through baking time. Cool on baking sheets for one minute; transfer to wire racks and cool completely. Store in an airtight container. |
