This is my favourite salad that has been made in my family for generations. It is simple and delicious and a fixture on our Christmas dinner table.
Ingredients:
2 cucumbers, peel removed and sliced as thinly as possible in rounds
1 white onion, sliced very thinly in rings or half rings
1 cup sour cream
1/4 cup white vinegar
salt and pepper
Directions:
1. Slice cucumbers, place in bowl and salt. Press a saucer down on the cucumbers and let sit for 2 hours, pressingly firmly and draining once in awhile. This will remove any bitterness from the cucumbers and also remove excess water.
2. Once cucumbers have been drained for 2 hours, add the onions, sour cream and vinegar to the bowl and mix. Salt and pepper to taste. Refrigerate for several hours to blend flavours and serve cold.
