Instead of dumping lotsa ghee inside the rice , I prefer to drizzle and keep it less without compromising the flavour and the taste , and I have been successful so far . Ingredients:
3 c basmati or long grain rice , soaked for 10 mins and drained |
1 onion , thinly sliced |
1 stick cinnamon , 1 star anise , 1 bay leaf , 1 sprig mint leaf |
1 cardamom , 1 clove |
1 tbsp nuts |
2 tbsp raisins |
2 tbsp ghee |
7 c water |
salt |
Directions:
1. In 1 tbsp ghee , fry the spices for a min. 2. Add the onion and saute till limp 3. Add the nuts and raisins . 4. One min later add the rice and mix until well coated . 5. Add the water and salt . 6. Once boil , cover and simmer until done and all water absorbed . 7. Drizzle the remaining 1 tbsp ghee and fluff the rice . 8. Serve warm with Salad with yogurt dressing and masala roasted green chilli chicken |
