When I moved to the South someone tricked me into eating catfish. I wouldn't even try it. Now I love it, especially fried Ingredients:
1 1/2 cups yellow cornmeal |
1/4 cup all-purpose flour |
3 teaspoons salt |
1 teaspoon ground red pepper |
1 teaspoon garlic powder |
1/2 teaspoon black pepper |
8 catfish fillets |
vegetable oil (for deep frying) |
Directions:
1. Mis cornmeal, flour, salt, garlic powder and the peppers together. 2. Dredge fish fillets in flour mixture, shaking off excess. 3. Heat oil to 375 degrees. 4. Fry fish 3 to 4 minutes on each side or until golden brown. 5. Drain on paper towels. |
