Cheap, easy, yummy, GFCF! Use whatever baking dish you have, but if you have a pie dish, that would be great! Ingredients:
1 (18 ounce) package polenta, pre-cooked and gluten-free (you could also use 1-2 corn tortillas instead if you have no polenta) |
1 (28 ounce) can diced tomatoes |
1 onion |
3 garlic cloves |
1 cup lentils |
1 green pepper |
1 teaspoon taco seasoning or 1 teaspoon chili powder, gluten free |
1/2 teaspoon salt |
Directions:
1. Boil lentils in plenty of water for 30 minutes, then drain. You may want to rinse it off too, if you don't particularly like the lentil taste. This is purely for a cheap source of protein. 2. In a fry pan, add onion, garlic, salt and green pepper. Saute for about 5 minutes. If you need to use an oil, try coconut or olive. Not butter. 3. Add canned tomatoes, lentils, and seasoning and cook through until hot. 4. Line pan with thin slices of polenta, add filling, then top with polenta. 5. Put in oven at 350 degrees F for about 30 minutes. 6. Enjoy! |
