Gfcf Chocolate Chip Cookies |

When I put my son on a GFCF(gluten free casein free) diet, I was determined to make a good chocolate chip cookie for him. I actually made these on the first attempt and they were perfect! Ingredients:
1/4 cup gfcf butter (or reg, butter if you're not doing casein free) |
1/4 cup peanut butter |
1/4 cup flax seed meal |
3/4 cup brown sugar |
1/4 cup granulated sugar |
1 teaspoon vanilla |
2 eggs |
1/2 teaspoon salt |
3/4 teaspoon baking soda |
1/2 teaspoon xanthan gum |
1/4 cup almond meal |
1 cup gluten free flour (i use bobs red mill gf all purpose baking flour) |
1 cup semi sweet chocolate chips |
1/2 cup raisins |
Directions:
1. Cream together butter, peanut butter, flax, and sugars. 2. Add vanilla and eggs. Beat until well combined. 3. Add salt, baking soda, xanathan gum, almond meal, and flour. Mix until well combined. 4. Mix in chocolate chips and raisins. 5. Chill dough for 20 minutes. 6. Heat oven to 350. 7. Scoop dough onto baking sheet by tablespoonfulls. 8. Bake 13 minutes or until golden brown. |
