GF Blueberry Muffins Ingredients:
1/2 cup butter |
0.33 cup sugars, granulated |
7 1/2 oz gluten flour, red mills |
2 medium egg, whole |
1 tsp vanilla extract |
2 teaspoon baking powder |
1/4 tsp salt, table |
2 1/2 cup, unthawed blueberries |
3 fl oz lite coconut milk |
4 tbsp corn starch |
1 oz almond meal/flour |
Directions:
1. Cream together butter, sugar and add eggs one at a time stirring in milk and vanilla. Slowly add dry ingredients to wet (NOT BEATING) Last, fold in blueberries. Grease Muffin tins well and bake for 25 - 30 min. 375. 2. Makes 9 Jumbo muffins or 6 jumbo and 6 average size. |
