Get Your Kids To Eat Zucchini Casserole

Not your regular zucchini dish. This was, yet another of, my Grammy's recipes. Zucchini fresh from her garden was a staple in the summer, but this was how she got the kids to eat it!!!
Ingredients:
3 medium zucchini squash
1/2 onion, chopped
2 fresh tomatoes, sliced
2 tablespoons olive oil
1 pound container low-fat cottage cheese, liquid drained off top
1 teaspoon basil
1/2 teaspoon oregano
1/2 cup shredded parmesan cheese
Directions:
1. Clean zucchini, and slice.
2. Saute zucchini and chopped onion in oil.
3. In a blender, whip cottage cheese with basil and oregano.
4. In a 1 1/2 quart casserole dish, place alternating layers of zucchini, cottage cheese mixture and tomatoes.
5. Top with parmesan cheese.
6. Bake, uncovered, at 350 degree for 25-30 minutes.
