This recipe came from a full time job two kids 15mos apart and a full time student needed to think quick but good Ingredients:
1 (2 lb) package boneless skinless chicken breasts (more for larger families) |
1 -2 cup mayonnaise (double for larger families) |
1 -2 large yellow sweet onion (sliced into rings) |
salt |
lemon pepper |
aluminum foil |
2 large whole tomatoes (crushed flavored will work just drain off juice) |
2 cups rice |
cooking spray |
Directions:
1. pre-heat oven to 350- lay foil in shallow baking pan spary with cooking oil-sprinkle pan with salt,lemon pepper a few slices of onion and tomatoes. Lay washed chicken breast on top and repeat, spread mayonaise over the top and cover with foil let cook for about 25/30 minutes. in seperate pot cook rice according to pkg when all is done lay rice on plate put chicken on top use sauce from mayo and dressing and serve with a side salad and hot rolls. |
