German Sweet Chocolate Cake |

Ingredients:
1 (4-ounce) package sweet baking chocolate |
1/2 cup boiling water |
1 cup butter or margarine, softened |
2 cups sugar |
4 eggs, separated |
1 teaspoon baking soda |
1 cup buttermilk |
2 1/4 cups all-purpose flour |
1/2 teaspoon salt |
1 teaspoon vanilla extract |
coconut-pecan filling |
Directions:
1. Combine chocolate and boiling water; stirring until melted. Set aside. 2. Cream butter; gradually add sugar, beating well. Add egg yolks, one at a time, beating well after each addition. Add chocolate mixture; beat well. 3. Dissolve soda in buttermilk. Combine flour and salt; add to creamed mixture alternately with buttermilk mixture, beginning and ending with flour mixture. Stir in vanilla. 4. Beat egg whites (at room temperature) until stiff peaks form; fold into batter. 5. Pour batter into 3 waxed paper-lined and greased 9-inch round cake pans. Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans, and cool completely. 6. Spread Coconut-Pecan Filling between the layers and on top of the cooled cake. |
