German-Style Red Cabbage (Rotkohl) |

A wonderful side-dish to any German meal! In Bavaria this dish is called Blaukraut or blue cabbage, since it is cooked until it is a light shade of purple. Ingredients:
1 small head red cabbage |
3 tablespoons bacon grease |
2 medium apples, diced |
1 cup water |
4 tablespoons vinegar |
4 tablespoons sugar |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/2 teaspoon ground cloves |
Directions:
1. Remove coarse outer leaves from cabbage. Cut head into four pieces, remove the hard core and shred finely. Melt bacon grease in a large pot, add cabbage and apple, stirring until well-mixed. Add water, vinegar and spices. Cook until tender, about 1 hour. Stir frequently. Serve with a favorite main dish such as sauerbraten or roasted pork shanks. |
