German Style Potato Salad |

Lemon zest adds the perfect kick to this standard German dish. Ingredients:
1.2 lbs. potatoes |
1 onion |
5 slices of bacon |
1 lemon |
1 cup beef broth |
1 tsp mustard |
1 bunch of chives |
4 tbs of dried parsley or use fresh |
3 tbs oil |
5 tbs white wine vinegar |
salt |
pepper |
Directions:
1. Peel potatoes and cut in slices 2. Boil potatoes with a dash of salt 3. Drain and place in large bowl 4. Dice onion very good 5. Fry bacon almost crispy 6. Remove bacon from pan, turn off heat and add onions 7. Onions should cook enough in pan without more heat 8. Add onions to the potatoes 9. Pour boiling beef broth over potatoes and onions 10. Chop bacon very fine 11. Mix bacon, vinegar, oil, mustard, bacon and herbs and spices in a small bowl 12. Add mixture to potatoes 13. Zest lemon over potato salad and squeeze juice into salad 14. Turn salad very good and adjust flavor with salt and pepper 15. Serve! |
