German Style Mashed Potatoes

This is a fluffy and delicious potato accompaniment to any main dish..roast , chops , chicken etc. Serve piping hot. From Swiss Meats Recipes.
Ingredients:
5 lbs red potatoes peeled and cubed
2 large tart apples peeled and chopped
1 lb applewood smoked cinnamon bacon diced
2 medium onions sliced
3 tbsp sugar
3 tbsp cider vinegar
2 tsp kosher or grey salt
Directions:
1. Place potatoes in a large saucepan and cover with water
2. bring to boil
3. Reduce heat cover and cook for 10 minutes
4. add apples cook 10 more minutes

6. Meanwhile:
7. cook diced bacon over med. heat until crisp
8. remove bacon and put on paper towel to drain
9. reserve 1 tbsp of drippings
10. In the bacon drippings saute oniions untii lightly browned
11. Drain potatoes and apples
12. Add sugar vinegar and salt
13. Mash slightly

15. Transfer to a warmed serving bowl
16. Top with onions and bacon
