This is a very hearty soup and such a unique blending of flavors. No way you can go wrong with this delight. Ingredients:
1 pound dried split peas |
4 large potatoes partially peeled |
2 large white onions peeled |
10 whole carrots unpeeled |
4 cloves garlic chopped |
2 packages polish sausage |
4 tablespoons mixed spices (thyme, bay leaves, cumin, cracked peppercorns, salt, oregano, celery |
seeds, caraway seeds, dry mustard, rosemary, mace, red pepper, marjoram) |
1 tablespoon olive oil |
Directions:
1. Soak peas in 3 quarts of water for several hours washing three times. 2. Bring peas to a rolling boil and add chopped potatoes, onions and sliced carrots. 3. Boil 4 hours. 4. Heat olive oil in double boiler. 5. Add spices and garlic cloves. 6. Cook 10 minutes then add to soup. 7. Cover and cook over low heat for 45 minutes. 8. Add sliced sausage and cook 30 minutes longer. |
