Ingredients:
7 medium-size new potatoes |
3 slices bacon |
1 small onion, chopped |
1/2 cup water |
1/2 cup vinegar |
1 tablespoon sugar |
2 teaspoons cornstarch |
1 teaspoon salt |
Directions:
1. Scrub potatoes. Cook in boiling water 30 minutes or until tender. Drain, and chill well. Peel and cut potatoes into thin slices. 2. Cook bacon in a large skillet until done but still limp. Remove bacon, reserving drippings in skillet. Tear bacon into bite-size pieces; set aside. 3. Sauté onion in bacon drippings until tender. Stir in remaining ingredients; cook over medium heat until slightly thickened. Add bacon and pour over potatoes. Toss gently. |
