This recipe is great for picnics because it does not contain eggs or mayo. Also, it can be served hot or cold. Ingredients:
3 lbs. potatoes |
1/2 lb. smoked (not maple) bacon, chopped |
1/2 cup cider vineger |
1 tablespoon sugar |
1 teaspoon sea salt |
1/4 teaspoon ground pepper |
3/4 cup onion, finely chopped |
2 teaspoons brown mustard seeds |
1/4 cup chopped parsley |
Directions:
1. Boil potatoes until tender but not mushy 2. After the potatoes cool, then peel, slice, and put in a serving bowl 3. Cook the bacon in a skillet until crisp 4. Remove the bacon and drain on a paper towel 5. Saute the onion in the bacon fat until tender 6. Add the vineagar, sugar, salt, pepper, and mustard seeds 7. Cook for 2 minutes 8. Pour over the potaoes and toss gently 9. Sprinkle or gently fold in the parsley |
