A potato dish that, as far as the men in my family are concerned, goes with any meat. Ingredients:
5 bacon strips |
3/4 cup chopped onion |
2 tbsp all-purpose flour |
2/3 cup cider vinegar |
1-1/3 cups water |
1 tsp salt |
1/8 tsp pepper |
6 cups sliced cooked peeled potatoes |
Directions:
1. In a large skillet, fry bacon until crisp. Remove and set aside. Drain all but 2-3 Tbsp of drippings, add onion and cook until tender. Stir in flour blending well. Add vinegar and water. Cook and stir until bubbly and makes a gravy. Crumble bacon and stir into gravy. Then add potatoes, stirring lightly to coat potato slices. Heat thoroughly. Serve warm. |
