I love this potato salad
Ingredients:
6 modestly-proportioned potatoes
4 strips bacon, minced
bacon drippings from the bacon
1/4 - 1/2 cup chopped onion
1/4 - 1/2 cup chopped celery
1 chopped dill pickle
1/4 c water or stock
1/2 cup apple vinegar
1/2 t sugar
1/2 t salt
paprika – pinch (optional)
dry mustard– pinch (optional
Directions:
1. Peel the potatoes, cut into bite-sized pieces, and cooked in water or stock until JUST done.
2. Cook the bacon, set aside. Cook the onions and celery in the bacon drippings. Remove from heat and add the chopped pickle
3. Heat the remaining ingredients just to boiling, and combine with all ingredients.
4. Serve warm with good crusty bread, bratwurst, and dark beer.
