3 lbs red potatoes |
3 slices bacon, diced |
1/4 cup onion, chopped |
1 tablespoon flour |
2 teaspoons salt |
1 1/4 tablespoons sugar |
1/4 teaspoon black pepper |
2/3 cup vinegar |
1/3 cup water |
Directions:
1. Simmer potatoes in jackets until tender; peel and slice thin. Fry bacon until crisp; add onion and cook 1 minute. Blend in flour, salt, sugar and pepper. Stir in vinegar and water. Cook 10 minutes, stirring occasionally. Pour bacon mixture over warm potatoes. Serve warm. |
