Mom made pickled beets all the time when I was a kid. I think it was one of those know it by heart type of dishes because I couldn't find her recipe. Howeve after much experimentation I'm pretty close. Ingredients:
6 cans of red beets with liquid |
(or prepare 12 cups of cooked fresh beets reserving some water) |
1 cup apple cider vinegar |
1 cup brown sugar (granular okay, i just prefer brown) |
2 cinnimon sticks |
5 cloves |
1 tsp allspice |
1/2 tsp salt (optional) |
Directions:
1. In a large pot, heat vinegar, 1 cup of water (or beet liquid), sugar and spices to boiling. Stir till sugar is disolved. 2. Add beets, bring back to a boil then remove from heat. 3. Cool. 4. Remove cinnimon sticks and cloves if you can find them. 5. Refrigerate overnight for best flavor. Serve chilled/cold. |
