This recipe comes from a little book called ABC Jiffy Cookery. I've had it for over 50 years. I haven't made any of the recipes yet. I'm putting them here so I can find them easier. Ingredients:
4 eggs |
1/2 cup sugar |
1 pinch salt |
3 tablespoons butter |
1 cup flour |
1/2 cup milk |
Directions:
1. Separate eggs. Beat the yolks, sugar, salt, and butter together. Beat in flour, and milk a little at a time, till used up. Whip the egg whites and fold into flour/butter mixture Pour the mixture into a pan with very hot butter and fry for a few minutes over medium heat. 2. When lightly browned turn over and using 2 forks tear the pancake into fairly large-sized pieces, rather roughly. Turn the pieces over and over, shaking the pan, till a nice golden brown is obtained. 3. Serve hot with sugar sprinkled over. A little cinnamon can be sprinkled also if desired. |
