Serve this main-dish pancake with broiled Canadian bacon. Ingredients:
2/3 cup canned unsweetened sliced apple |
2 teaspoons sugar |
1/8 teaspoon ground cinnamon |
1/4 cup all-purpose flour |
1 1/2 teaspoons sugar |
1/4 cup skim milk |
1/2 teaspoon vegetable oil |
1/4 teaspoon vanilla extract |
1 egg, lightly beaten |
vegetable cooking spray |
1 teaspoon vegetable oil |
1 tablespoon sifted powdered sugar |
Directions:
1. Combine first 3 ingredients in a small saucepan, stirring well. Cook over medium-heat until thoroughly heated. Drain; set aside, and keep warm. 2. Combine flour and sugar, stirring well. Combine milk and next 3 ingredients; add to dry ingredients, stirring well with a wire whisk. Set aside. 3. Wrap handle of an 8-inch nonstick skillet with aluminum foil; coat skillet with cooking spray. Add 1 teaspoon oil, and place in oven. Preheat skillet in oven at 425° for 2 to 3 minutes. Pour batter into hot skillet. Bake at 425° for 15 minutes or until puffy and browned. 4. Remove pancake from skillet. Top with warm apple mixture, and sprinkle with powdered sugar. Serve immediately. |
