German Apple -cinnamon Pancakes |

These are sweet but with the crunch of potato pancakes and may be served for any meal and esp Hanukah season Ingredients:
2 large eggs |
1/4 cup sugar |
2 tsp ground cinnamon |
1/2 tsp coarse salt |
1 tsp baking powder |
1 tsp vanilla |
1/2 cup orange juice |
3/4 cup flour |
3 cups chopped peeled apples ( ie granny smith ) |
oil to fry |
sugar and cinnamon to sprinkle |
Directions:
1. Beat eggs with mixer until light and lemon colored on high speed, 2. Reduce heat to medium high and blend in sugar , cinnmaon, salt, baking powder and vanilla. 3. Beat in orange juice 4. Beat in flour to blend 5. Stir in apples( tip: thin slice then chop into pieces ) 6. Heat 1/2 inch of oil in skillet until hot but not smoking. 7. Drop mixture about 3 Tbs into hot oil, do not crowd and make sure oil is back to hot prior to frying each batch to prevent soggy pancakes 8. Fry about 2 minutes or golden on each side 9. Remove to paper toweling to absorb excess oil 10. Sprinkle pancakes with a bit of sugar/cinnamon. 11. Serve immediately 12. May keep hot in a 200F oven for up to 15 minuter |
