This cake is quick, easy, and the perfect way to use up some fresh picked apples and/or as a perfect ending for any big Oktoberfest meal. It is so good, you will want to make it anytime you can get good apples!
Ingredients:
2 eggs
3/4 cup vegetable oil
2 cups sugar
1 teaspoon vanilla
2 cups flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
4 cups peeled chopped apples
Directions:
1. In large bowl, beat eggs and oil until smooth.
2. Add next 6 ingredients and mix well.
3. Fold in apples.
4. Pour into greased 9 x 13 pan.
5. Bake at 350F degrees for 50-55 minutes.
