The apples in this cake make it so moist and delicious. I generally double the recipe and make two cakes at once - I freeze one for those last-minute occasions. It's so good with coffee. On my Kitchenaid mixer, I use the dough-hook attachment. Ingredients:
2 eggs |
1 c vegetable oil |
2 c white sugar |
2 tsp ground cinnamon |
1/2 tsp salt |
1 tsp vanilla extract |
2 c all-purpose flour |
1 tsp baking soda |
4 c apples - cored, diced (i don't peel them, but you can if you want) |
Directions:
1. 1Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan. 2. In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well. 3. Combine the flour salt, baking soda, and cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon (if using a kitchenaid, no need to fold in by hand). Spread batter into the prepared pan. 4. Bake at 350 degrees F for 45 minutes or until cake tests done with a toothpick. Let cake cool on a wire rack. Once cake is cool, dust with icing sugar. |
