3/4 cup butter |
1/2 cup sugar |
2 large eggs |
1 tablespoon vanilla extract |
3 tablespoons milk |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
2 teaspoons baking powder |
2 1/4 cups flour, unbleached |
1/4 cup almonds, ground |
11/2 tablespoon orange rind, grated |
1/4 cup raisins, if desired |

1/2 cup finely chopped almonds |
1/2 cup sugar |
1 tablespoon brown sugar |
1 1/2 teaspoon flour |
1 tablespoon melted butter |
Directions:
1. Cream butter and sugar. 2. Beat in eggs, vanilla, and milk. 3. Combine cinnamon, nutmeg, baking powder and flour. 4. Add flour mixture to butter mixture. 5. Gently fold in almonds, orange rind and raisins. 6. Pour batter into greased muffin tins, filling half full. 7. Topping: 8. Mix topping ingredients together; sprinkle over unbaked muffins. 9. Bake at 375ºF. for 25 to 30 minutes, or until browned. |
