Georgia Sweet Potato Souffle |

This is so easy to make and tastes so good! And it's just perfect for special occasions!! Ingredients:
3 cups hot, mashed sweet potatoes |
1/4 cup butter, room temperature |
1/4 cup packed light brown sugar, divided |
1/2 cup august sebastiani country chenin blanc |
1/4 cup whipping cream or half-and-half |
1/2 teaspoon ground cinnamon |
1/4 teaspoon salt |
1/4 teaspoon white pepper |
4 eggs, separated, with egg whites at room temperature |
1/3 cup finely chopped pecans |
Directions:
1. Preheat oven to 375-degrees F. 2. Grease a 2-quart souffle dish. 3. Combine potatoes and butter in a medium bowl; beat until butter melts. 4. Stir in 2 Tablespoons sugar, Chenin Blanc, whipping cream, cinnamon, salt and pepper, mixing well. 5. With electric mixer, beat egg whites in a large bowl until stiff peaks form. 6. Wash beaters. 7. With electric mixer, in another bowl, beat egg yolks until thick and lemon colored; pour into potato mixture. 8. Fold potato mixture into egg whites. 9. Spoon mixture into souffle dish; sprinkle with remaining sugar and pecans. 10. Bake for 55 minutes or until puffed and set. 11. Serve immediately. |
