This unusual recipe is from the famous Mrs. Wilkes' Boarding House in Savannah, GA:
Ingredients:
12 eggs, separated
3 1/2 cups powdered sugar
1/2 teaspoon salt
3 cups pecans, very finely chopped
Directions:
1. Beat the egg whites and salt together until foamy. Gradually add the sugar and beat until stiff, but not too dry.
2. Beat the egg yolks until thick.
3. Fold the egg yolks into the whites, then gently fold in the pecans.
4. Bake in a tube pan in a preheated 350 F oven for 50 minutes.
5. This cake freezes well.
