Can't remember where I got this recipe but a nice cake/quickbread made with peach puree in the batter. It freezes very well and a nice recipe for extra peaches etc, makes 2 loaves Ingredients:
1 1/2 cups sugar |
1/2 cup butter or margaine, room temperature |
2 eggs |
2 1/4 cups pureed peaches ( fresh is best but one can use canned- even baby food peaches are okay substitute) |
2 cups all-purpose flour or as neede to make a cake batter |
1 teaspoon cinnamon |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/4 teaspoon salt |
1 teaspoon vanilla or almond |
1 cup finely chopped pecans or almonds |
Directions:
1. Cream sugar and shortening together. 2. Add eggs and mix thoroughly. 3. Add peach puree and dry ingredients. 4. Mix thoroughly. 5. Add vanilla and chopped pecans and stir until blended. 6. Pour into two loaf pans approximately 5- x 9-inches in size, that have been well greased and floured. 7. Bake at 325 degrees F for 55 minutes to 1 hour. 8. Let bread cool a few minutes before removing from pan. 9. Then wrap and let mellow overnight. 10. May be frozen. |
