Ingredients:
1/3 cup uncooked regular rice |
2 cups chicken broth |
2 1/2 cups diced cooked chicken |
2 eggs, beaten |
1/3 cup chopped celery |
1/4 cup chopped pimiento |
3/4 teaspoon salt |
1/8 teaspoon poultry seasoning |
mushroom sauce |
Directions:
1. Combine rice and broth in a medium saucepan; bring to a boil. Cover; reduce heat, and simmer 10 minutes. 2. Add chicken, eggs, celery, pimiento, salt, and poultry seasoning to rice mixture; stir well. Spoon into a well-greased 10- x 6- x 2-inch baking dish. Bake at 325° for 1 hour and 5 minutes. Serve hot with mushroom sauce. |
