Crisp and delicious, decadent and wicked Georgia Bacon is wonderful with biscuits and cream gravy made out of the drippings. A southern favorite from G-ma Roberts who says it was named for the cook who made it, not for the state. Ingredients:
regular breakfast bacon |
several grinds of black pepper |
flour |
water |
vegetable oil |
cast iron skillet or spider |
Directions:
1. Make a batter with the flour and water, about as thick as a good cream gravy. 2. Season with lots of pepper. 3. Dip bacon in, piece by piece until coated completely. 4. Heat oil in skillet just as if you were going to fry chicken. 5. Drop bacon in slice by slice and brown well (so that the bacon is really cooked) 6. “The universal food of the people of Texas, both rich and poor, seems to be corn-dodger and fried bacon.” 7.
