Adapted from the bulletin, Nature's Garden for Peace and Victory, February 14, 1942. Be sure to use only young, tender leaves that have not been treated with pesticide. Ingredients:
2 cups finely shredded dandelion greens |
1 medium onion, finely chopped |
2 small radishes, finely chopped |
1 tablespoon minced parsley |
1 tablespoon sugar (optional) |
salt |
pepper |
vinaigrette (or mayonnaise) |
hard-boiled egg, sliced, for garnish |
pickled beet, for garnish |
Directions:
1. Mix the dandelion, onion, radishes, parsley, sugar, salt and pepper. 2. Add vinaigrette and toss to mix. 3. Garnish with slices of egg and/or beets. |
