A healthier, balanced version. Reduced fat and carbs, added fiber Ingredients:
3/4 cup chicken stock |
1/3 cup splenda |
2 tbsp soy sauce |
2 tbsp cooking wine |
1 tbsp vinegar |
1/2 tsp ground ginger |
1 tsp garlic, minced |
1 tbsp fiber, psyllium husk or benefiber |
2 1/2 grams guar gum, approx 1/4t if this doesn't work use 2t cornstarch |
1 tbsp olive oil |
1 carrot, thin sliced |
2 tsp red pepper flakes |
1 pound boneless skinless chicken breasts, cut into small pieces |
Directions:
1. Cube chicken, brown in olive oil with carrots. 2. Mix together liquids plus splenda (or stevia) and spices. Wisk in guar gum and fiber at the same time. 3. Pour mixture on top of chicken, stirring until thickened. |
