Tofu and broccoli in a spicy-sweet sauce. I haven't eaten real General Tsao's for many years, so I'm not sure this really tastes like it but it's mighty tasty! Add more red pepper flakes if you like it very spicy. Ingredients:
3/4 cup vegetable broth |
1 tbsp corn starch |
1 tbsp sugar |
2 tbsp reduced-sodium soy sauce |
1 tbsp rice wine vinegar |
1/2 tsp ground ginger |
2 tsp peanut oil |
1 lb firm tofu, drained and patted dry |
2 cups broccoli, florets |
1/2 tsp red pepper flakes, to taste |
2 medium scallions, chopped |
2 garlic cloves, minced |
Directions:
1. In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside. 2. Slice tofu width-wise into 8 slices and then again into 16 pieces. 3. Spray a large skillet with oil and heat over medium-high heat. Add tofu slices in a single layer and brown for about 5 minutes on each side. Remove from skillet and set aside. 4. Heat oil in a wok or large skillet over medium-high heat. Add broccoli and pepper and stir-fry for about 2 minutes. Add scallions and garlic and cook, stirring, 3-4 minutes. 5. Add reserved sauce and tofu and simmer until sauce thickens, about 3 minutes. 6. Serve over rice, if desired. |
