My own take on a tomato based sauce
Ingredients:
1 large onion, sliced
2 large garlic cloves
1/4 cup ginger, diced
1 jalapeno pepper, diced
1 (14 ounce) can smoked diced tomatoes
1 1/2 tablespoons tomato paste
1 tablespoon malt vinegar
salt
1/4 cup fat-free half-and-half or 1/4 cup cream
14 ounces garbanzo beans (chick peas)
Directions:
1. Caramelize the onion over medium heat for (18-20 minutes).
2. Add in garlic, ginger and jalapeno cook for (2-3 minutes).
3. Add in garbanzo beans.
4. Add the half & half and simmer for a few minutes.
5. Serve.
