super yummy. make as an appy or a main course with rice and veggie stirfry. baked not fried!!!! Ingredients:

24 chicken wings |
3 tsp peanut or olive oile |
salt |
sauce |
2 tsp cornstarch |
3 tbsp soy sauce |
2 tsp toasted sesame oil |
3 tbsp rice vinegar |
3 tbsp water |
2 tbsp finely chopped fresh giner |
3 cloves garlic, finely chopped |
1 tsp sambal oelek (hot pepper and garlic sauce found in international isle of grocery store) |
1/2 tsp paprika |
3 tbsp water |
1/2 cup sugar |
1 green onion, finelty sliced |
Directions:
1. chicken wIngs: 2. preheat oven with rack in the middle to 190C or375F. line a 30x43cm (12x17inch) baking sheet with foil. 3. cut wings through the joints into 3 pieces. discard wing tips. 4. place the chicken in a bowl. coat with oil and season with salt. arrange on a cooling rack so they do not touch. back for 20 mins, then turn and bake till the meat pulls easily from the bone, about 20 mins. finish by broiling until skin turns brown. 5. sauce: 6. wisk together in a bowl, cornstarch, soy sauce, sesame oil, rice vinegar, water, fresh ground ginger, garlic, sambal oelek and paprika. 7. in a large sauce pan bring water and sugar to a boil. cook without stirring unti the mixture turns gold. add the spice mixture. simmer unti the caramel has dissolved and has become syrupy. 8. in a large nonstick skillet over medium-high heat, cook chicken in the sauce until completely coated and well glazed. garish with green onion. *** note... to prevent the wings from becoming soft, serve them on a plate or platter instead of in a bowl! |
