Adapted from The Complete Round the World Meat Cookbook. Original says to peel the potatoes. Ingredients:
6 russet potatoes |
water |
salt |
2 tablespoons butter |
1/2 cup onion, minced |
1/4 lb sausage meat |
1 tablespoon chopped parsley |
1/2 teaspoon salt |
1/4 black pepper |
Directions:
1. Preheat oven to 350°F. 2. Halve the potatoes and scoop out the centers, leaving unbroken shells. 3. Cook centers in boiling salted water until tender. 4. Drain and mash. 5. Combine with remaining ingredients. 6. Stuff into shells. 7. Place in a greased baking dish. 8. Bake for 1 hour. |
