Yummmmm. This is a wonderful appy or salad when asked to bring a dish (bring veggies on the side). Great for a BBQ or a hot summer night dinner. I make this often in the summer when veggies are garden fresh. This is from my Mastercook collection. Florida Tomato Committee. Ingredients:
1 1/2 lbs fresh garden tomatoes |
1 cup chopped peeled cucumber (1 medium) |
1 cup chopped green pepper (1 large) |
1/2 cup finely chopped onion |
1/2 cup bottled italian dressing |
1 (10 ounce) package prepared pizza crust |
1 cup shredded monterey jack pepper cheese (4 ounces) |
Directions:
1. Preheat oven to 400ºF. 2. Use tomatoes held at room temperature until fully ripe. 3. Coarsely chop tomatoes (makes about 4-1/2 cups). 4. In a large bowl, toss tomatoes, cucumber, green pepper, onion and Italian dressing until well combined. 5. Place pizza crust on a baking sheet. 6. Sprinkle with Monterey Jack cheese. 7. Bake until cheese melts, about 10 minutes. 8. Remove from oven and top with tomato mixture. 9. Serve immediately. |
