1/4 cup v8 vegetable juice |
1 1/2 tablespoons olive oil |
1 tablespoon red wine vinegar |
1/2 teaspoon salt |
1/2 teaspoon tabasco jalapeno sauce (jalapeno pepper sauce) |
1 english seedless cucumber, quartered lengthwise and sliced 1/4 inch thick |
2 tomatoes, cut in chunks |
1 yellow bell pepper, cut into chunks |
1/4 cup red onion, chopped |
1/4 cup parsley, finely chopped |
Directions:
1. In a large bowl mix together juice, oil, vinegar, salt and tabasco. 2. Stir in cucumber,tomatoes,pepper and onion. 3. Place in the fridge for 1 hour,stirring often until cold. 4. Stir in parsley. |
