Ingredients:
1/4 cup v8 vegetable juice
1 1/2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/2 teaspoon tabasco jalapeno sauce (jalapeno pepper sauce)
1 english seedless cucumber, quartered lengthwise and sliced 1/4 inch thick
2 tomatoes, cut in chunks
1 yellow bell pepper, cut into chunks
1/4 cup red onion, chopped
1/4 cup parsley, finely chopped
Directions:
1. In a large bowl mix together juice, oil, vinegar, salt and tabasco.
2. Stir in cucumber,tomatoes,pepper and onion.
3. Place in the fridge for 1 hour,stirring often until cold.
4. Stir in parsley.
