This is a very colorful salad. Will dress up any meal. This is good on a hot day.....any combo of summer veggies will do...cherry tomatoes, celery, carrots, brocolli.... anything...will make pretty layers and a great presentation. Read more ... Ingredients:
1/2 cup canola oil |
1/3 cup lemon juice |
2 cloves garlic, finely chopped |
1 1/2 teaspoons salt |
1/4 teaspoon pepper |
1 medium green pepper, seeded and diced |
2 medium firm tomatoes, diced |
1 medium cucumber, peeled, seeded and diced |
1/2 cup green onion diced |
Directions:
1. In a pint jar with a tight fitting lid. combine oil, lemon juice, garlic, salt and pepper. 2. Shake well. 3. In a narrow 1 quart glass container, layer 1/2 each of the green pepper, tomatoes, cucumbers and onions. 4. repeat layering with remaining vegetables. 5. Pour dressing over salad and chill at least 4 hours to blend flavors. |
