The best summer soup ever. Ingredients:
4 cups tomato juice |
1/2 cup finely chopped onion |
1 clove garlic, minced |
1 medium bell pepper, minced |
2 teaspoons honey (optional) |
1 medium cucumber, peeled seeded and minced |
2 scallions, minced |
1/2 lemon, juice of |
1 lime, juice of |
2 tablespoons red wine vinegar |
1 tablespoon finely chopped basil |
1 tablespoon finely chopped tarragon |
1/4-1/2 teaspoon cumin |
1/4 cup minced fresh parsley |
2 -3 tablespoons olive oil |
salt, to taste |
pepper, to taste |
cayenne, to taste |
2 cups diced fresh tomatoes |
Directions:
1. Combine all ingredients in a large pot. 2. Refrigerate til ready to serve. |
