This gazpacho has a thick sauce by pureeing half the ingredients. Serves 2 as main course or 4-8 as a side dish. Ingredients:
5 tomatoes |
1 red pepper |
1 yellow pepper |
1 zucchini, small |
1 cucumber |
4 green onions |
parsley, to taste |
1 clove garlic |
cayenne, to taste (1/8 to 1/4 tsp.) |
sea salt, to taste |
1 tbs lemon or lime juice |
Directions:
1. Blend together ONLY half of all ingredients in high-speed blender. 2. Chop or slice the other half. 3. Stir all together with “sauce.” |
