Ingredients:
2 cucumbers, diced |
3 large tomatoes, diced |
1 red pepper, chopped |
1 green pepper, chopped |
1 red onion, chopped |
3 garlic cloves, minced |
1/4 cup red wine vinegar |
2 1/2 cups tomato juice |
salt |
pepper |
1/4 cup fresh parsley, chopped |
1/4 cup fresh basil, chopped |
juice of 1 lime |
tabasco |
Directions:
1. In large glass bowl combine vegetables. Add remaining ingredients and mix well. Add half the mixture to a food processor and blend until smooth. Combine puree with original mixture. Chill for 4 hours and serve. |
