I didn't think I'd like Gazpacho until I tried this recipe. It's very good with fresh from the garden vegetables. I love that you don't have to cook a thing in this recipe. Just do some chopping and stirring. Be sure to chill the soup; I like to chill mine overnight.
Ingredients:
1/2 cup celery, diced
1/2 cup green pepper, diced
1/2 cup sweet onion, diced
1/2 cup cucumber, diced and seeded (i like to keep the skin on but your choice)
1/2 cup tomato, diced
1 (10 3/4 ounce) can tomato soup
1 (10 3/4 ounce) can water
1 tablespoon italian dressing (your favorite)
1/2 teaspoon fresh ground black pepper
1 dash worcestershire sauce
1 1/2 cups v 8 juice
1 tablespoon red wine vinegar
1/2 teaspoon garlic powder (to taste)
hot sauce, 4 dashes (or more)
Directions:
1. Combine ingredients and refrigerate several hours or overnight.
