Cold Tomato Soup Ingredients:
2 pounds tomatoes, ripe with peels left on, garden fresh is best |
1/2 onion |
1 red bell pepper |
1 cucumber |
1 clove garlic |
3 slices whole grain bread |
1 tablespoon extra virgin olive oil |
1 tablespoon red wine vinegar |
1 pinch salt |
Directions:
1. Rinse vegetables and then cut to fit in blender or food processor. Peel and slice garlic. Blend until somewhat smooth. Break up bread and add to vegetable mixture. Let soak until bread is soggy and puree until smooth. Pass mixture through sieve. Stir in oil, vinegar and salt. Chill. Serve cold. |
