Gazpacho is a flavourful cold, raw soup. Cooking time does not include several hours to chill.
Ingredients:
4 cups tomato juice
2 cups tomatoes, diced
1 cucumber, peeled, seeded and diced
1/2 cup red onion, chopped
1/2 cup celery, chopped
1/2 cup bell pepper, chopped
1 jalapeno pepper, chopped fine
2 scallions, chopped
2 garlic cloves, minced
2 tablespoons wine vinegar
2 tablespoons lemon juice or 2 tablespoons lime juice
2 tablespoons olive oil
salt and pepper, to taste
Directions:
1. Combine all of the ingredients in a large bowl.
2. Purée some or all of the soup (optional).
3. Chill for several hours.
