Gazpacho is a flavourful cold, raw soup. Cooking time does not include several hours to chill. Ingredients:
4 cups tomato juice |
2 cups tomatoes, diced |
1 cucumber, peeled, seeded and diced |
1/2 cup red onion, chopped |
1/2 cup celery, chopped |
1/2 cup bell pepper, chopped |
1 jalapeno pepper, chopped fine |
2 scallions, chopped |
2 garlic cloves, minced |
2 tablespoons wine vinegar |
2 tablespoons lemon juice or 2 tablespoons lime juice |
2 tablespoons olive oil |
salt and pepper, to taste |
Directions:
1. Combine all of the ingredients in a large bowl. 2. Purée some or all of the soup (optional). 3. Chill for several hours. |
